For the FTA channels you might be able to guess which transmitter they are near (and therefore the corresponding frequencies) from this site:
http://www.lincrad.co.nz/transmitters.htm

For sky digital the channel numbers are the same all over NZ, so you only need to figure out which brand/model of set top box they are using so you can choose the correct codes for the IR blaster.

I guess once I have a working image the setup of the channel frequencies can be amended through the guided setup?

I have started a fresh thread to ask if someone can sort out an image for me as I leave ther UK in 10 days and I can running out of time

Yeah I guess so. You could initially set it up for sky digital, and then later repeat guided setup to choose both FTA (Free To Air) and sky digital (once Napier has been added to the emulator).
