Would a dual tuner Sky UK STB work here in NZ? Obviously you'd need to change sat settings, but I don't know how configurable they are?

Crypto differences would be the main issue I'd bet. The UK use a different version of the encryption system to that used in the US [and here].

So, while you could make a UK box work here, it wouldn't work as a Sky Network TV receiver out of the box.
